There's a good variety of recipes contained in this book. As with most recipe books I thought some of the portions were a little on the small size but it is easy to double a recipe if needed. If you're expecting a recipe book with loads of pictures, sorry, not many in this one but the recipes and instructions are clearly written.Chapter 9 contains all the sauce and stock recipes that you will need to create some of these recipes. For those of you not aware of what the Dirty Dozen and Clean Fifteen are you will find these two lists at the end. (Advice on which fruits and vegetables have the most/least pesticides.) Then come the measurement conversion charts followed by a recipe index and then an ingredient index. What this is, is a list to make looking up a specific ingredient contained in a recipe much easier. Say you are looking to cook with Feta cheese. Just head to that letter and then 'Feta cheese' and you will find all the recipes containing that ingredient in one helpful list.I was provided a copy of this book by the publisher. A nice collection of recipes to make with your Instant Pot (or other pressure cooker), Sheet pan, Skillet & Dutch Oven...AND Air Fryer and Slow Cooker as well!!!!Lauren Keating says she has a few tricks up her sleeve to help with fast, healthy eating, and she proves it.The chapters are organized by meal plus Snacks & Sides and Staples & Sauces.In the top corner of the recipe page it is noted what style of cooking it is, so no skimming the recipe to see what to use. Nice for quick planning.Personal winners of the Breakfast recipes was Butternut Squash Hash & Eggs skillet, and the Peaches & Cream (almond or coconut) Quinoa Bowl using electric pressure cooker.The Lighter Falafel prepared in an air fryer was really a nice change from oil frying.To say that there are too many favorites from this cookbook to list is NOT a stretch, so I will mention my very very favorites!Mushroom & Farro "Stroganoff"Balsamic Chicken & MushroomsRoasted Eggplant with Ground LambShrimp & Sausage Paella***Chocolate Zucchini Cake*** made in a skilletBanana Donut HolesHomemade Enchilada SauceThese recipes used ingredients I already had in my kitchen and easy to find fresh items.This cookbook is a gem, even for an experienced cook. The Healthy Eating On-Pot Cookbook by Lauren Keating, has 101 recipes that can be prepared in the InstantPot, Airfryer, Dutch Oven, electric pressure cooker, sheet pan, skillet or slow cooker. Since I use all of those methods of cooking, the slow cooker is my absolute favorite. I just bought an Airfryer so I am learning how to use it and I do use the dutch oven a lot too. So that said, this cookbook is really great.The breakdown of the cookbook follows:Chapter 1 goes into what to eat, fast food prep, refrigerator and pantry staples and one pot cooking, using the different ways to cook. Chapter 2 is Breakfast, chapter 3 has meatless main dishes, chapter 4 is for chicken recipes, chapter 5 is meat, chapter 6 seafood, chapter 7 is desserts, chapter 8 snacks and sides an my favorite chapter is chapter 9 staples and sauces. So as you can see there are so many recipes in each section.The recipes are easy to follow, a great variety for different cooking vessels. A few of the recipes are: Roasted Brussels Sprouts with Bacon and Pecans, what's not to like? For an easy recipe, Sheet Pan Lemon Herb Tuna with Gnocchi. In the dessert section, you have Blueberry Crisp and Peach Cobbler.I love this cookbook and I can't wait to try one of the recipes.I received a copy of the book for review purposes only from the publisher.
